Many of you know me as Nikki and have often wondered who "D" in D'Delicious Delicacies is? Well, "D" is Dellita, a puerto rican carib indian from St.Thomas US Virgin Islands. She well known for her hospitality, generousity, delicious food and baked goods. She was also my granny. She passed away my senior year of high school in 2009 but not before she created an amazing legacy, leaving a major impact on the lives of many.
My sister and I had the pleasure of growing up in my grandmother's house before we moved to Florida. In that that time we had the opportunity to cook and bake with her on any given occasion. I learned how to make bread, tart and cake from scratch, at a young age. We would bake and mail off care packages to my aunts that were no longer on the island. And we had so much fun and joy knowing that we sent someone a piece of "home" to make them smile.
As I got older baking became therapeutic for me, a way to relax in the midst of chaos or sadness. After the passing of my grandmother I baked but not as often as I did before. Until one of my friends senior year got wind of my love for baking. She introduced me to her mom who was also a baker and arranged for her to teach me her red velvet cake recipe. And it has been history ever since.
In 2015 when I decided to open D'Delicious Delicacies I did it with my granny's hospitality and kindness in mind. Bringing the island flair, a piece of home to the mainland and intertwining it with all the other recipes that I learned along the way.
